Our Beer Philosophy

We believe that great craft beer isn't about extremes. We don't try to stand out by making the highest alcohol content, or the hoppiest IPA. Like a great chef, we use the best ingredients, creativity and love to craft beer we want to drink. We use traditional recipes with modern twists, creating flavors that other breweries cannot offer. We hold ourselves to such high standards that we refuse to serve mediocre beer.

Seasonal Offerings

Our seasonal offerings will be dictated by two things: the weather, and the crops. Summer brews will focus on tree-ripened fruit, and will be made lighter to accommodate the season. The fall will bring out a

traditionally-brewed Oktoberfest and beers that are perfect to sip on as you watch the leaves turn. Our winter brews will keep you warm, but will also be inviting even to a light-beer drinker. In the spring, budding fruit will be accompanied by crisp, hoppy ales and traditional german lagers.

The Brewery

Our Brewery consists of a 15 barrel brewhouse and 30 barrel fermentors. In our current setup, we should have a maximum capacity of around 3,200 bbls per year. We are equipped to fill kegs can beers for outside distribution.

All of our beer is brewed, fermented, and packaged right here on Catawba Island.


We planted 6 different varieties of hops in 2011. They grow to 15' tall and we harvest them each fall.

Home Grown Hops

In 2011 we planted hops in hopes of using them for the future brewery. But, like many things in hobby farming, we transplanted them, lost their labels, and cut some down to make room for peaches.

We're down to one row of the original hops, all of them are unnamed and unidentified. These hops will be used once a year for our Estate Ale. As the amount of hops change per year, so will the flavor. Get it while it lasts, it will go quick! 

We are in the midst of planting our own hopyard, which will be ready to harvest in a few years. Hops are not only the most famous ingredient in beer, their arguably the most beautiful.
